Miso Glazed Salmon

Makes 2 salmon fillets.

Ingredients:

  • 2 Salmon Fillet

  • 2 tablespoon of miso paste

  • 2 teaspoons of honey

  • 2 teaspoons of olive oil

  • 2 pinches salt

  • 2 pinches of pepper

  • 1 Tablespoon of all-purpose flour

Instructions:

  • Prep the salmon fillets with the miso glaze. In a small bowl, combine the miso paste, honey, oil, salt, and pepper. Rub this mixture onto the salmon fillet (the non-skin side).

  • Heat a large non-stick pan with oil over medium-low heat. Meanwhile, sprinkle a light dusting of all-purpose flour on the skin side of the salmon- this will give that skin that extra crispiness.

  • Raise the heat to medium-high and place the salmon in the pan, skin-side up.

  • Depending on the thickness of your fillet, your salmon will cook for about 4-6 minutes on the first side. Once you see the salmon turn from it’s orangish hue to a pinkish one halfway through the fillet, you may flip it over with a spatula, skin-side down.

  • Depending on how crispy you prefer your skin, cook for another 3-4 minutes on this side.

  • Once finished, transfer to plate and enjoy this easy, healthy, delicious meal!

Black Sesame Cucumber and Tomato Salad

To pair with your miso-glazed salmon. Makes 2 servings.

Ingredients:

  • 1 English Hothouse cucumber (or cucumber of your choice)

  • 2 Tomatoes

  • 3 Teaspoons of black sesame (if possible, grind the sesame seeds to allow for a stronger black sesame flavor)

  • A pinch of salt

  • A pinch of pepper

  • 1/2 a lemon

Instructions:

  • Slice the cucumber in half-moon slices- thickness is up to you.

  • Chop the tomatoes - chunky or small, again it’s up to you. Mix in a bowl with the cucumbers.

  • Add the black sesame, salt and pepper. Stir the mixture.

  • Squeeze half of a lemon juice into the mixture and stir again.

  • Allow the salad to cool in the refrigerator for at least 30 minutes for an increased refreshing sensation!
